Not that it looks very appealing in this picture, but Nicole and I just got finished scarfing down a wonderful stuffed acorn squash meal. It's my first cooking attempt from the Better Homes and Gardens New Dieters Cookbook, the same one Kareem's been cooking out of with much success. Here are my notes, scrawled on the page in black magic marker:
'Good, but takes a bit long for what it is. Try microwavable? Keep squash to stuffing ratio low. Also, probably wouldn't keep well. Oh, and we doubled the stuffing, which was a good move."
